Pausing with tandoori chickpeas

After weekends away visiting friends and family, I love nothing more than preparing a nourishing meal to cap off the weekend. But in saying that, after a weekend away, I can’t stand having to go to the grocery store for this meal so I turn to the pantry. 

My routine; park car (leaving it packed), boil kettle, open up the house (i.e. windows, blinds), make tea, throw ingredients for a dhal or tandoori chickpeas in a pot whilst drinking a cuppa to rehydrate. Slide pot in the oven. While it’s bubbling away, I unpack the car, put a load of washing on and get myself prepared for the week. And once this is complete, dinner is ready and the jobs are finished and there’s a moment to pause before the week begins again.

This style of recipe is excellent during the week too. After work, I love to throw everything in the pot, then oven and head off for a walk in the park. When I return, I throw in some spinach or kale and I’ve got myself a delicious bowl plus some for lunch the following day. 

I was given a large bag of silverbeet last weekend and I’m making gozleme this weekend.

Small reflections to ponder whilst walking in the park; how does it feel, in busy or resting moments, to pause and notice how you’re holding yourself and breathing?
